Inulin is a dietary fibre extracted from the roots of certain plants. Chicory root is the most used source, but the inulin we use in the Belvas No Sugar Added Chocolate recipe is extracted from Agave root.
It is considered a prebiotic, in the sense that it stimulates the development of the bacteria of the intestinal flora.
As such, it maintains a normal intestinal transit (health claim granted by the European Food Safety Authority).
It has only been available in organic form for a few years, which has enabled Belvas to develop a recipe for chocolate with no added sugar, certified organic by avoiding alcohols (polyhydric alcohols), stevia, and sweetened fruits, often used in recipes for reduced sugar chocolate.
Caution: foods rich in inulin can cause flatulence, especially for those not used to it. Belvas organic inulin chocolate should therefore be consumed in moderation at first. For example, one sweet a day.
The organic Agave inulin used by Belvas is not to be confused with Agave Syrup, which is another extract of the same plant, but Agave Syrup is some sugar, not a fibre.
