2 tbsp. water
1 tsp. lemon juice
2 tbsp. coconut flour
2 tbsp. butter
2 tbsp. cream cheese
3 large eggs, separated

- In a small saucepan, add strawberries, water, and lemon juice. Cook on low heat for about 10 minutes until the strawberries are soft and the liquid has reduced. Let it cool for a few minutes.
- Preheat your oven to 350°F (175°C). Grease four 8-ounce ramekins with butter or cooking spray.
- In a medium-sized bowl, whisk together coconut flour, butter, and cream cheese until smooth. Add egg yolks one at a time, whisking well after each addition. Stir in the strawberry mixture, Swerve, and salt.
- In a large bowl, beat egg whites until foamy. Add cream of tartar and continue beating until soft peaks form. Gently fold in the strawberry mixture until well combined.
