Easy Keto Strawberry Sorbet Recipe

2 cups fresh strawberries
1 cup water
1/4 cup Erythritol
1/4 cup fresh lime juice
1 tsp pure vanilla extract
1/2 tsp xanthan gum
Pinch of Himalayan pink salt

- Start by cleaning and hulling your strawberries. Once done, add them to a blender along with the water, fresh lime juice, vanilla extract and salt. Blend this mixture until it is smooth and well combined.
- Once the mixture is smooth, pour it through a fine mesh sieve to remove the seeds and any pulp.
- Pour the sieved mixture back into the blender and add in the Erythritol and xanthan gum. Blend this mixture until it is fully combined and the Erythritol has dissolved completely.
- Pour the mixture into an ice cream maker and churn until it becomes a sorbet.
- Transfer the sorbet to a container and freeze it for around 2 hours or until it is firm enough to scoop.
