2 large eggs
1/4 cup almond flour
2 tbsp. coconut flour
2 tbsp. cream cheese
1 tsp. baking powder
1 tsp. vanilla extract
1 tbsp. granulated sweetener of your choice (we prefer allulose)
Pinch of salt
Butter or coconut oil for frying

Instructions:
- In a mixing bowl, combine all the dry ingredients: almond flour, coconut flour, baking powder, sweetener, and salt.
- In another mixing bowl, mix the eggs, cream cheese, and vanilla extract with an electric mixer until smooth.
- Add the dry ingredients to the egg mixture and mix again until combined.
- Heat a non-stick pan on medium heat and add a dollop of butter or coconut oil.
- Use a 1/4 cup measuring cup to scoop the batter onto the pan. Cook the pancake until bubbles form on the surface, then flip and cook until golden brown on both sides.
- Repeat until all the batter is used up. The recipe yields approximately 4 medium-sized pancakes.
